秘制卤鸡 Homemade braised chicken
我一直以为卤鸡都要用上很多种的香料,很复杂的工序。直到这一天在家里吃到这个从小吃到大的卤鸡,注意到酱汁里并没有残留下多余的材料,便向吴师奶讨教做这道菜的方法。一问之下,才发现只需要几种简单常见的调味料,就可以做出好味道的卤鸡。从此以后,这个卤鸡就成了我家里缺乏材料,又想不出要煮什么的时候,轻易就可以出现在饭桌上的菜色。
材料:
大鸡腿 2只
糖 1茶匙
蚝油 1茶匙
黑酱油 1/2茶匙
油 少许
腌料:
酱油 2茶匙
胡椒粉 1/2茶匙
鸡精粉 1/2茶匙
料酒 1茶匙
五香粉 1/2茶匙
做法:
鸡腿洗净后以腌料腌制过夜。
烧热少许油,把糖加入,中火炒至糖完全溶化并呈微黄的糖色。
放入腌制好的鸡肉翻炒一下,加入蚝油和黑酱油,然后倒入一杯水稍微搅拌均匀。
盖上锅盖煮大约20分钟或至鸡肉熟透即可,其间要把鸡肉翻面以让鸡肉均匀上色。
