干煸四季豆 Szechuan style stir fried string beans
干煸四季豆可说是最常出现在阿七家的菜色之一,除了简单易做,这道菜也把平淡的蔬菜变得美味又下饭。干煸的原义是以少量的油小火翻炒至四季豆的水份挥发掉而变软,可是现在外头的餐馆大多是以油炸的方式来快速取得相似的效果。阿七因为不想浪费太多油,所以还是会依照原本的方式,慢慢用小火把四季豆炒干,这样吃起来也会比较健康嘛~
材料:
四季豆 450g
猪肉碎 150g
辣椒干 2条(嗜辣的朋友可以多加一点)
蒜头 5瓣
虾米 1/4碗
盐 1茶匙
胡椒粉 1/2茶匙
油 少许
做法:
辣椒干切成小段,蒜头切成蒜米,虾米切碎备用。
烧热少许油,倒入四季豆以小火炒至外皮变皱后取出。
用少许油爆香蒜米,然后放入辣椒干和虾米炒香。
猪肉碎和盐、胡椒粉拌匀,倒入一起炒至肉碎熟透。
放入炒过的四季豆,快速拌炒后就可起锅。
