蒜香冬粉蒸虾 Steamed prawn with garlic and vermicelli
单看这菜色的名称,不用我多说,大家大概可以想像得到冬粉吸满了蒸虾留下的精华和鲜味。而虾子加上蒜蓉和简单的调味料,带出了海鲜的鲜甜。话说我第一次为这么大的虾子开背,整个人弄得手忙脚乱的,虾子也开得不够漂亮。后来看视频才知道用剪刀来剪开虾子的背部会容易很多,所以想弄这道菜的朋友要注意啰!
材料:
大虾 10只
冬粉 1把
蒜头 1粒
青葱碎 少许(点缀用)
油 少许
调味料:
酱油 2大匙
盐 1/4茶匙
糖 2茶匙
胡椒粉 1/4茶匙
水 1/2小碗
做法:
把虾子开背,然后把内脏去掉洗净。
冬粉用水浸泡30分钟备用。
把所有调味料在小碗中混合备用。
蒜头切成蒜米,用少许油爆香,然后加入做法3的调味料煮滚后熄火。
把冬粉铺在盘子上,再把开背虾整齐排列在上面,然后把做法4的蒜米酱料放在虾肉上。
用沸水蒸大约5分钟或是至虾熟透后取出。
撒上青葱碎做点缀。
