酱烧排骨 Braised Pork Ribs with Fermented Beans Sauce
和朋友在偶尔聊天下提到了她的故乡菜,其中一道叫<豆瓣肉>的,刚聊到这个她的眼睛都亮了起来,十分八卦的我不禁追问她这道菜的做法,下面的材料和食谱是经过我改良后的成果,味道我还蛮满意的,完全的白饭杀手! 朋友的版本要比这个简单得多, 希望她看到了别打我 :)
材料: 排骨1份(250g), 豆瓣酱1匙,糖少许,清酒少许,黑酱油少许,清水半杯,青葱粒(随意),辣椒丝/粒(随意)。
做法:
1。排骨用滚水川烫片刻后捞起备用。
2。热油锅后转小火炒香豆瓣酱。
3。加入清水和1,转大火一起煮滚。
4。把糖,清酒和黑酱油加入调味。
5。一直炖煮至酱汁收干后撒上青葱粒和辣椒丝即可。
