椰汁红豆布丁 Coconut milk red bean pudding
椰奶和红豆一向来都是绝配,这一次刚好家里有用剩的椰奶必须要在变坏之前用掉,所以灵机一动做了这个椰汁红豆布丁。成果相当不错,有香浓的椰浆味,又有淡淡的红豆香,不过椰浆的胆固醇很高,不可多吃哦!
材料(2人份):
椰奶 100ml
红豆水 100ml
蛋白 2个
糖 1大匙
蜜红豆 2大匙
做法:
红豆水和糖隔水融化。
待冷却后加入椰奶和蛋白混合一起。
把做法2过筛隔掉杂质,然后倒入容器中。
把一锅水煮沸然后转小火,放入装有做法3的容器,蒸15分钟后熄火。
加一大匙蜜红豆在蒸好的布丁上面。
小贴士:
红豆水是做蜜红豆的时候留下的,食谱可以参考

布丁可以在蒸好后热吃,也可以放入冰箱冷藏冷吃。
