咸蛋炒苦瓜 Salted egg stir-fried with bitter gourd

阿七不吃苦瓜,但是本着一股冒险的精神,而且想要开发更多不一样菜色,阿七决定来挑战咸蛋炒苦瓜。感觉上什么东西只要炒咸蛋,就一定会变得好吃。。。



材料:
苦瓜  1/3条
咸蛋黄 1颗
盐 少许
油 少许

做法:
  1. 苦瓜切半,挖掉瓜瓤和瓜籽,然后切成薄片。
  2. 苦瓜放入沸水中滚2分钟,然后捞起浸在冷水中,这样可以去掉苦味的同时,又可以保持苦瓜的翠绿和爽脆的口感。
  3. 热油中放入咸蛋黄,用锅铲把咸蛋黄弄碎,炒至蛋黄完全溶解并起泡沫。
  4. 苦瓜沥干水后放入一起炒至均匀地被蛋黄裹住,加少许盐调味。

后记:
第一次做咸蛋炒苦瓜没有很成功,咸蛋黄在锅里没有完全融化,留下许多小颗粒。生的咸蛋黄很难用刀子切碎,下次可以试试先蒸熟蛋黄再压碎。而且,感觉上这样的份量需要2个咸蛋黄才够呢~~

    1. Thanks, Baby Sumo... even though i don't like bitter gourd, but i love salted egg, it goes well with a lot of other ingredients... ^_^
